From our cooks: Sweet potato curry soup


Ingredients (serves 4)

  • 1kg of sweet potato
  • 1 onion
  • 2 garlic gloves
  • 20ml Fincas Duernas Olive oil
  • 2L vegetable stock
  • 20g red curry paste
  • 250ml light coconut milk
  • Rosemary
  • Thyme
  • Salt and Pepper

  • Oven tray
  • Oven
  • Soup pan
  • Blender

Preparation method

  1. Pre-heat the oven to 180 degrees.
  2. Clean the sweet potatoes under cold water.
  3. Cut the sweet potato into chunks.
  4. Clean and cut the onion and garlic into rough pieces.
  5. Add the sweet potato, onion and garlic onto the oven tray and mix with 10ml Finca Duernas olive oil.
  6. Chop the rosemary and thyme.
  7. Sprinkle the rosemary and thyme over the sweet potato and mix together.
  8. Put the oven tray, with the mixed ingredients, into the oven for 30 minutes.
  9. When the sweet potato is puffed and cooked, take the oven tray out of the oven.
  10. Heat up your soup pan and add the last 10ml of Finca Duernas olive oil.
  11. Fry the sweet potato mixture and add the red curry paste.
  12. Add the vegetable stock and coconut milk.
  13. Let it simmer for 20 minutes.
  14. Blend the soup to a smooth mixture.
  15. Add some slat and pepper to taste.
  16. Serve and enjoy!
